Some ingredients are just meant to be together, and I think the ones in this recipe are prime examples. So when I thought up these waffles, I figured they’d taste good, but to be honest, I hadn’t an inkling how outstandingly yummy they’d be. With crisp surfaces and patches of browned cheese, a delicate interior crunch from the cornmeal, and a savory-sweet-spicy-smoky-sharp flavor through and through, these waffles are bona fide winners. Serve them for breakfast with eggs or as an accompaniment to a big pot of chili. Or just eat them hot off the waffle iron.
